Abstract

Rice consumption has been linked to various chronic diseases, including insulin resistance and type 2 diabetes mellitus. The increasing prevalence of these diseases raises the concern for global researchers and public health policymakers to identify the most appropriate interventions and prevention. There are several types of rice cultivars, which are briefly categorized as white rice, colored rice, and genetically modified rice. Unpolished and colored rice are considered to be healthier than white rice, since they contain more antioxidants, fiber, unsaturated fatty acids, vitamins, and minerals. These types of rice are best for disease prevention and have a better impact when combined with other healthy foods in a diet high in vegetables, fruits, and beans and lower in sugar and fat. Many initiatives have been implemented to lower the consumption of white rice and change to unpolished or colored rice. © 2022 Elsevier Inc. All rights reserved.
